| FREE Online Dinner Reservation | Cuisine: French Experience: A native of Provence, France, Michel Jean developed an early interest in cooking around his mother's and aunt's kitchens. He graduated from the Ecole Hoteliere de Nice in 1968, and traveled first around Europe and then around the world aboard cruise ships. In 1976 he came to New York with renowned chef Michel Guerard, to open the famous Regine's.
In 1980 he married Patricia Jean, an art graduate from Grosse Pointe, Michigan, with culinary passions. They lived in Provence for two years. Back in New York, he worked at the River Cafe and at Le Cirque. She became the assistant manager of the famous and exclusive Le Club. For four years they dreamed and planned their future restaurant. On Bastille Day, 1986, they opened Provence.
Enjoy the cuisine of their newest chef, Alain Eigenmann, coming to Provence after working in France, Switzerland, and many top restaurants in New York. Recent winner of the 2001 Academie Culinaire de France. Sample appetizers include Pissaladiere (Provencal onion and anchovy tart), Tartare de Thon (Tuna tartare) and Moules a la Catalane (Baked mussels, garlic butter, and almonds). Entree selections include Bouillabaisse (Poached fish and shellfish, garlic, saffron, pernod broth), Cotelettes d'Agneau (Lamb chops, potato gratin, ratatouille, rosemary jus) and Lapin des Garrigues (Braised rabbit stuffed with herbs, foie gras).
